Sorbitan Tristearate is an effective emulsifier to retard fat bloom in chocolate.
Fat used in chocolate, particularly cocoa butter, forms as a tightly packed β’ polymorph/crystal which is an unstable crystal but is vital for the functional and aesthetic quality of chocolate.
If chocolate is not tempered properly or is exposed to excessive heat, these β’ crystals convert to β crystals which are less tightly packed but are more stable.
These β crystals tend to migrate to the surface causing fat bloom to occur and also having a negative impact on the aesthetics of the chocolate.

Sorbitan Tristearate’s structure mimics the β’ crystals and bonds with such fat crystals and retards their conversion to the less desirable β crystals.

ABSTRACT
The formation and stabilization of fat crystals in palm oil (PO) by the templating effects of sorbitan tristearate (STS) and sucrose stearate (S-370) were examined.
We observed that the crystallization mechanism occurred via heterogeneous nucleation, which was induced by co-crystallization or seeding, after the addition of STS or S-370, respectively.
Overall, both emulsifiers, STS and S-370, caused an increase in the hardness of PO, which was related to changes in the microstructure.
In addition, the intensity of this effect was shown to be dependent on the emulsifiers concentration.
In differential scanning calorimetry analysis, S-370 proved to be associated predominantly to the crystallization of high-melting triacylglycerols (TAGs), while STS showed to actuate the crystallization of high and low-melting TAGs.
Moreover, the addition of STS improved the polymorphic stability of the PO, while the use of S-370 resulted in a soft texture at lower temperatures.

Other release to the environment of Span 65 is likely to occur from: indoor use (e.g. machine wash liquids/detergents, automotive care products, paints and coating or adhesives, fragrances and air fresheners), outdoor use, indoor use in close systems with minimal release (e.g. cooling liquids in refrigerators, oil-based electric heaters) and outdoor use in close systems with minimal release (e.g. hydraulic liquids in automotive suspension, lubricants in motor oil and break fluids).

Product description:
Our Span range of sorbitan esters are widely used as W/O emulsifiers and when used in combination with ethoxylated sorbitan esters (the Tween range) they contribute to the overall stability of O/W emulsions.
Manipulation of the Span/Tween ratio produces emulsifying systems of various HLB values, allowing the emulsification of a wide range of oils and waxes.
Span 65 is a W/O emulsifier particularly recommended for use with unsaturated lipid components such as oleyl alcohol or vegetable oils.
Span 65 is also known to stabilise hard fat suppository bases and helps to inhibit blooming.

The term sorbitan describes the anhydride form of sorbitol, whose fatty acids are lipophilic whereas sorbitol body is hydrophilic.
This bifunctionality in one molecule provides the basic properties useful in cleaners, detergents, polymer additives, and textile industry as emulsifiers, wetting agents, and viscosity modifiers.
Sorbitan esters are rather lipophilic (or hydrophobic) surfactants exhibiting low HLB (Hydrophilic-Lipophilic Balance) values; having an affinity for, tending to combine with, or capable of dissolving in lipids (or water-insoluble).
While, the ethoxylated sorbitan esters are hydrophilics exhibiting high HLB values; having an affinity for water; readily absorbing or dissolving in water.
The type of fatty acid and the mole number of ethylene oxide provides diverse HLB values for proper applications.
